Rachel Ray and Joyce Behar talk about KFC’s double down chicken sandwich, and Rachel Ray calls it a double by-pass.  In this video they discuss, why we ate healthier as children.  Today, Rachel Ray says, “There is a desert of food.”

I couldn’t agree more.  If you are out on the road, there is no place to eat healthy.  Both ladies in the video grew up in an Italian neighborhood.  I did as well.  We had vegetable stands, and meat markets, and mom cooked up the fresh foods that we ate.

Fast food was pizza, and it was a rarity not a staple.

Also, discussed was that poor eating is a matter of class and education.  It’s cheaper for a family of four to got to KFC and buy a bucket of chicken for a few bucks with all the “fixin’s.”  Poor people can eat cheaper at KFC than they can cook at home, and with our busy lifestyles it’s easier and delicious, but it’s unhealthy.

CHICKEN AND WAFFLE MONTE CRISTOS WITH ROSEMARY-MAPLE GRAVY by Rachael Ray

8 slices thick cut bacon or sliced pancetta
4 (6-ounce) boneless, skinless chicken breasts
Salt and freshly ground black pepper
4 tablespoons butter
1 1/2 to 2 cups multi-grain pancake mix (recommended: Highland Sugarworks)
1 large egg
1 to 1 1/2 cups milk
3 tablespoons vegetable oil
1/4 teaspoon grated nutmeg
A generous handful grated Parmigiano-Reggiano
Extra-virgin olive oil, for drizzling
2 sprigs rosemary, leaves finely chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1/3 cup dark amber maple syrup
place cutlet on each waffle and top with a couple of slices of bacon or pancetta. Add a second cutlet on the bacon and cover with another waffle. Cut the chicken and bacon wafflewich from corner to corner and serve with gravy poured over the top or in individual ramekins for dipping.
How is this more figure friendly than the double down from KFC?
